One of my New Year’s resolutions is to feed my kids (and myself) less processed foods (or at least, process the foods myself, so I know what’s going in them). My kids love sausage rolls, but they contain “mystery meat”. Buying sausage meat to make your own is not much better, so I tried this vegetarian sausage roll recipe by Cyndi O’Meara.
I’m not a big fan of vegetarian versions of meat, but I definitely make an exception for these. They somehow taste and have the same texture as normal sausage rolls. They even passed the kid test – my kids ate them up without any comments.
Filled with feta, walnuts, rolled oats and egg, you’ll need a food processor or Thermomix to make them. It sounds like a weird combination, but somehow it works!
Here’s the recipe:
½ cup walnuts
1 onion, peeled and chopped into quarters
1 tablespoon tamari or soy sauce
1 cup feta cheese
½ cup bread crumbs
1 cup rolled oats
2 tablespoon mixed herbs
3 sheets of puff pastry, thawed
1-2 tablespoons milk, for brushing
sesame seeds for sprinkling (optional)
Place eggs, walnuts, onion, tamari or soy sauce, breadcrumbs, oats, mixed herbs and feta cheese in a food processor or Thermomix and process until finely chopped.
Cut thawed puff pastry in half on a bench.
Divide the mixture evenly among the 6 pastry halves, forming a long sausage down the “long” middle. Roll up the pastry around the filling and cut into half.
Brush the top with milk and sprinkle with sesame seeds (optional).
Place sausage rolls on a baking tray and bake at 200°C (400°F) for 20-25 minutes, until golden.
